Traditional Style Vegan Shepherd's Pie

5 russet potatoes (peeled and cut into one in. cubes)
12 cup mayonnaise (vegan)
12 cup soy milk
14 cup olive oil
3 tbsps cheese substitutes (vegan cream, tofutti)
2 tsps salt
1 tbsp vegetable oil
1 yellow onion (chopped)
2 carrots (chopped)

a. Place the potatoes during a pot, cowl with cold water, and convey to a boil over medium-high heat. flip the warmth to medium-low, and boil the potatoes till tender, concerning twenty five minutes; drain.

b. Stir the vegan mayonnaise, soy milk, olive oil, vegan cream cheese, and salt into the potatoes, and mash with a potato masher till swish and fluffy. Set the potatoes aside.

c. Preheat oven to four hundred degrees F (200 degrees C), and spray a 2-quart baking dish with cooking spray.
