Barrie Arliss, a copywriter from Seattle, decided to make her own energy-boosting snacks after “buying too many granola bars at the grocery store—at $4 a pop, no less,” she says. For extra coconut flavor, add up to 1/2 cup more coconut flakes. 1 cup peanut butter1 cup honey3 cups instant rolled oats1 cup raisins? cup chocolate whey protein powder½ cup unsweetened coconut flakes1 cup flaxseeds, optional
1. Combine peanut butter and honey in small saucepan, and heat over medium heat, stirring until well combined. Remove from heat, and stir in oats, raisins, protein powder, coconut flakes, and flaxseeds (if using).
2. Pour mixture into 8-inch square glass baking dish, and freeze for 30 to 60 minutes. Remove from freezer, and cut into 32 1- x 2-inch bars. Store in refrigerator for up to a week.
