Creamy Spinach Spread

This is another winner. Excellent for spreading on celery sticks or raw crackers. High in minerals and great overall nutrition. Put all ingredients in the food processor and blend until smooth consistency. You could also make it in a small blender or if you're without these tools chop/dice everything and mix in a bowl.


4 cups baby spinach


½ cup arugula


¼ cup cilantro


1 avocado


2 tablespoons tahini


¼ cup dulse (soaked)


Juice of 1 lemon


½ teaspoon cumin (optional)

refreshing jicama

This juice has a simple sweet flavor.


¼ purple cabbage


1 golden delish apple


3 carrots


1 ½ cups of jicama


and a thumbnail size piece of fresh ginger root.

Q Should I soak nuts, dates and the like for smoothies?


A Yes, it’s always best to soak any dried fruit before you consume it because if you don’t it will rehydrate with water taken from your body, which can lead to your dehydration. Use the soak water in your smoothie.


As for nuts, they should be soaked as well to inactivate enzyme inhibitors. Enzyme inhibitors allow nuts to be stored for long periods without spoilage. When the nuts are soaked it’s like the spring rains in nature that bring life back to the nut (seed that it is) so that it may sprout and grow a great tree.


Nuts are much tastier and easier on the digestive system after soaking. If nuts are eaten in their dry (dormant) state then our own digestive enzymes must do the work that nature should be doing. One reason health fails in so many eating a primarily cooked food diet is because sufficient digestive enzymes required to digest such foods cannot be made by our bodies long term. The soak water from nuts should be discarded and the nuts rinsed quickly before eating.

Q I'm on day 2 in raw food detox, and I am quite tired. I also have a headache, any tips?


A First let me say congratulations on doing a detox diet to improve your health. That’s Great, and although it may not seem like it now your body thanks you.


You have two choices with your situation. You can tough it out which will mean that the toxin debris will be leaving your body quicker and be over sooner, or you can slow the detox down so it is easier to handle and function in day to day activities, but will mean the overall detox will last longer.


This also depend s on how healthy you are and what your present toxic load is. Even if you are healthy, your body may require many cleanses over the years to cleanse deep enough to remove toxins from your childhood. My point being although you will see amazing results from a cleanse now, more cleanses will probably be needed down the road anyway so being comfortable now may be important to you.


If you’re eating solid raw food meals now then you can add in more fat which will slow the detox and its associated symptoms. If you’re doing a green smoothie or juice cleanse then you can incorporate more solid raw foods into your cleanse and slow down the detox that way.


Water is the most cleansing, followed by juice, smoothies, whole raw foods, and then healthy cooked foods. Depending where you are on your health journey you can choose what is most appropriate for you in your raw food detox plan. You can add, mix or delete these cleansing foods to achieve the level of cleansing and associated detox symptoms you can handle.


Plenty of pure water is also important to flush the toxins from your system and green foods, which are alkalizing, can be very helpful in buffering the acidity of the toxic waste.

Q Can you have dried fruit on the raw diet?


A Yes, but in moderation, fresh fruit should be your mainstay. Things to remember concerning dried fruit are as follows:


1) Rehydrate the fruit for a few hours or overnight before eating. Otherwise dried fruit will rehydrate itself with water from your body which can lead to your dehydration. If it’s not possible to rehydrate because you’re hiking or something then try to consume it with water rich foods like celery or cucumbers.


2) Make sure the fruit is not treated with sulfates or other preservatives.


3) Dried fruit should be dried at or below approx. 108 degrees Fahrenheit to be considered a raw food.


4) Make sure to brush your teeth after eating dried fruit as it can stick to your teeth and cause problems.

Q Can I can my juiced foods, or smoothies as opposed to freezing. Does this take away any value. thank you! I love your website!


A It would be nice if you could, but unfortunately juices and smoothies should be consumed as soon after preparing as possible to get the full nutritional value. You could take a smoothie made in the morning with you for lunch, or a fresh juice for that matter. Just make sure to fill the container as full as possible to limit the exposure to air. This is not ideal, but better than not at all.


I don't really recommend freezing at all...fresh is best.

How can I clear up my skin from acne?

Q I have acne with lots of scarring. What can I do to clear it up?


A The first things I would do is stop eating dairy, go gluten free, and stop eating junk food. Those three things will probably do amazing things for your skin. I would cut down on any other animal products you are eating, or if you really want change cut them out all together. It may be easier to do this in steps though, you’ll have to decide.


Then of course I would be eating at least 75% raw foods. When I say raw foods, I mean fresh raw fruits and vegetables with very little, if any packaged raw foods.


Juicing would be great if you have a juicer and or green smoothies if you have a decent blender. In just a few short weeks you could stop the new breakouts and begin to heal. The scarring may take some time, but the sooner you get started the sooner you can look forward to at least reducing the amount of scarring you have now.

Basically as you clean up your diet your body will begin to heal itself. The acne is a sign of toxicity, so once you stop putting poisons in your body, your body will react with kindness towards you.

How long can I wait to drink my veggie juice?

Q I have been doing this for about one month now and I am wondering if I am getting all of the benefits because I make my drinks at night and take them to work with me in the morning every day. Is this ok? Am I getting all of the health benefits as though I was making the drinks in the morning?


Also, are frozen fruits ok to use? I throw some in with my veggies and am wondering if they have the same health benefits as fresh?


A Fresh is always best, but better to drink them the next day than not at all. If you fill the container to the top with juice so there is very little if any air then they will last longer nutritionally speaking. As soon as the juice is made it begins to degrade, but still has nutritional value hours later and even the next day. The minerals are still intact, but the quality and quantity of the enzymes, vitamins, and phytonutrients will be degraded.


As for frozen fruit, they might have been riper and fresher when frozen than what’s in the produce section now, however freezing destroys or degrades enzymes, vitamins and phytonutrients. It’s said that freezing destroys about 2/3 of the nutrition. But once again, better to eat some frozen fruit than none at all.


Rule of thumb with juicing and raw foods diet: Use the freshest ripest produce available, and consume as soon after making as possible.

Q I heard going on a raw food diet can cure/reverse PCOS, is this true?


A Since I’m not a doctor I can’t say if the raw food diet can help your Polycystic ovary syndrome (PCOS), but I do know that the raw diet will put your body in a very good position to heal itself. Many people have healed issues, many of them hormonal, through the raw diet, juicing, and for some fasting.


When you feed the body a natural healthy diet, and avoid harmful foods the body will self cleanse and heal as it returns to a state of balance.

I call this juice garden delight because everything except the carrots and celery came from my garden. It’s loaded with greens yet not too harsh due to the carrots. Being fresh from the garden it’s a real energizer.


10 leaves collard tree greens (or other greens)

Q Can we drink a blend of carrot and beet root juice?


A Sure you can. You can juice just about any blend of fruits and vegetables as long as they don’t cause you digestive distress. Carrots and Beets are quite similar so should be no issue at all. Beets can be quite a cleanser so if you’re not used to them I advise on going easy on the amount you use. Adding some greens and a little lemon to this juice would be an awesome blend.


Sometimes even the best juice blends can give digestive distress because the system is not used to large amounts of fresh raw produce. Digestive stress later on may be from your body cleaning out old toxins and releasing them for elimination. Both of these should pass over time as you clean out and your body adapts to healthy raw foods.


If you're new to juicing then following typical food combining protocol in the early going is not a bad idea.


Food combining can be quite an issue for some people. Combinations like starchy vegetables and sweet fruit, or high protein foods with high starch foods. You can find a food combing chart online that will help explain this further.Food Combining

What is the best detox juice to do that can help me better my situation?


A Any juice that contains greens and or vegetables would be good for a general detox. The idea is to replace a meal or meals with juice and make the solid foods you do consume of a healthy variety. Many times it’s not so much what we have to add to our diets to become healthy, but rather what we need to leave out.


Take a look at the detox diet recipes to see what appeals to you and give one a try. You may want to start with one that is at least slightly sweet and go from there.


One of my very favorites not listed on that page is watermelon and celery. You juice the watermelon rind as well.


I would be sure to check with your doctor before you start juicing to make sure nothing will interfere with your medications.

How expensive is it to be on a raw food diet?

Q I know fruit can be expensive, and even greens in the produce section are not cheap. If I'm eating all raw foods how expensive will that get?


A Well, that depends whether you have been on a vegan diet based primarily on starch based foods like, rice, oatmeal, and potatoes, or are coming from the Standard American Diet (SAD) eating lots of meat, dairy, and processed junk food.


The raw diet will be more expensive than the vegan diet I described, but with improved health you can plan on cutting way down on health care expenditures and lost days at work due to illness. If you have been on the SAD diet then you will probably save money upfront.


There are ways to cut the cost of fresh produce dramatically if you are smart about it.


1) Try not to do your main shopping at over priced stores like Whole Foods. Check out the markets around you area that you haven’t shopped at before. More and more groceries are carrying organic produce and some at very reasonable prices. If you don’t see what you want tell your grocer. If enough people ask for it they’ll be glad to stock it and sell it to you.


2) Shopping at the local Farmer’s Market will save you money over most super markets, and buying in bulk will save you considerably more. If you can’t use a whole case of oranges then split it with a friend or member of your local raw food meet-up group. As you get to know the farmers they’ll give you better deals and treat you as a prime customer.


3) Start growing some of your own food. Even a small garden in buckets on the deck of your apartment will help cut costs.


4) Start sprouting. Sprouting seeds are very inexpensive and sprouting is very easy. Sprouts provide great nutrition for penny’s a meal.


5) There are always people with fruit trees that don’t want the fruit, at least not all of it, and are happy to have it picked by someone like you rather than have it fall on the ground and make a mess. If you see a neglected fruit tree knock on their door and ask if you can pick....and offer to pick some for them when you do. Every year I clean up in my area with people who don’t like persimmons. I eat free persimmons for months in late fall and winter.


6) Forage. Your back yard and any open space in your neighborhood are bound to be full of FREE edible plants. Purchase a book so you know what to look for and go for it.


7) Plant some fruit trees in your yard for the long haul. Plant what does well in your climate and you could be enjoying fruit with a couple of years.


Don’t let money come between you and your good health. Your newfound health, mental clarity, and bountiful energy will help you find resources for whatever you need…even more money.

The book Edible Wild Plants: Wild Foods From Dirt To Plateby John Kallas has nice pictures and has been helpful for me in identifying the edible wild greens in my yard and the surrounding hills.
